Oven-Roasted Blackberry Ham with Pimento Cheese-Stuffed Red Potatoes
Ingredients
- Blackberry Ham Glaze:
- 1 cup fresh blackberries
- 2 tablespoons molasses
- 1 tablespoon butter
- 1 teaspoon apple cider vinegar
- 1/4 teaspoon salt
- Main Ingredients:
- 3 pounds ham, fully cooked
- Pimento Cheese-Stuffed Potatoes:
- 8 medium red potatoes
- 1 cup pimento cheese
- 2 tablespoons mayonnaise
- 1/4 cup chopped pickles
- 1 teaspoon ranch seasoning
- Roasted Vegetables:
- 1 cup green beans, trimmed
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
1. Preparation:
- Preheat your oven to 350°F (175°C).
2. Blackberry Ham Glaze:
- In a small saucepan over medium heat, combine the blackberries, molasses, butter, apple cider vinegar, and salt.
- Cook while stirring occasionally until the blackberries break down and the mixture thickens slightly, about PT10M 10 minutes.
- Remove from heat and strain to remove seeds. Set aside the glaze.
3. Prepare the Ham:
- Place the ham in a roasting pan and cover it evenly with the prepared blackberry glaze.
- Cover the pan with aluminum foil to prevent burning.
4. Bake the Ham:
- Roast in the preheated oven for about PT1H 1 hour, or until the ham is heated through and the glaze has caramelized slightly.
5. Prepare the Potatoes:
- While the ham is roasting, poke holes in the red potatoes with a fork.
- Wrap each potato in aluminum foil and place on a baking sheet. Bake in the oven alongside the ham for PT45M 45 minutes or until tender.
6. Roast the Vegetables:
- In a bowl, toss the green beans, broccoli, and cauliflower with olive oil, salt, and pepper.
- Spread vegetables on a baking sheet. Roast for PT25M 25 minutes, or until tender and slightly caramelized.
7. Finish the Pimento Cheese-Stuffed Potatoes:
- Remove the baked potatoes from the oven. Let cool slightly before handling.
- Slice the top off each potato and scoop out the inside into a bowl.
- Mix in the pimento cheese, mayonnaise, chopped pickles, and ranch seasoning.
- Spoon the mixture back into the potato shells and place back in the oven for an additional PT10M 10 minutes.
8. Serve:
- Slice the glazed ham and serve alongside the pimento cheese-stuffed potatoes and roasted vegetables.
