Oven-Roasted BLT Bruschetta with Herb-Garlic Aioli
Ingredients
- 8 slices bacon
- 4 ripe tomatoes, diced
- 1 head of romaine lettuce, shredded
- 1/2 cup mayonnaise
- 2 cloves garlic, minced
- 1/2 teaspoon paprika
- Fresh herbs (such as basil and parsley), finely chopped – 2 tablespoons
- 8 slices of crusty bread (like a baguette or ciabatta)
- Salt and black pepper to taste
Instructions
1. Preheat Oven
Preheat your oven to 400°F (200°C).
2. Prepare the Bacon
Arrange the bacon slices in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for about 15 minutes or until crispy. Remove from the oven and place on a paper towel-lined plate to drain excess fat.
3. Toast the Bread
While the bacon is cooking, place the slices of bread on a separate baking sheet. When the bacon is done, reduce the oven temperature to 350°F (175°C) and toast the bread for about 5-7 minutes until golden brown.
4. Make the Herb-Garlic Aioli
In a small bowl, combine the mayonnaise, minced garlic, paprika, and finely chopped fresh herbs. Mix well until all ingredients are fully incorporated. Season with salt and black pepper to taste.
5. Assemble the Bruschetta
Spread a generous amount of the herb-garlic aioli onto each toasted bread slice. Layer with shredded lettuce and diced tomatoes. Top with crispy bacon slices.
6. Serve
Arrange the bruschetta on a serving platter. For an extra touch, drizzle any remaining aioli over the top or serve on the side for dipping.
