Oven-Roasted Bourbon Turkey Breast with Garlic Herb Vegetables



Ingredients



For the Turkey Breast:

- 1 (3-pound) turkey breast, boneless
- 2 tablespoons bourbon
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme

For the Vegetables:

- 2 cups green beans, trimmed
- 2 cups corn kernels
- 1 cup edamame, shelled
- 2 large sweet potatoes, peeled and cubed
- 1 pound potatoes, peeled and cubed
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried rosemary

Instructions



1. Preheat oven to 375°F (190°C).

2. Prepare the Turkey Breast:
- In a small bowl, mix together bourbon, minced garlic, olive oil, salt, black pepper, and dried thyme.
- Rub the mixture evenly over the turkey breast. Cover and let marinate in the refrigerator for 15 minutes.

3. Prepare the Vegetables:
- In a large mixing bowl, combine green beans, corn, edamame, sweet potatoes, and potatoes.
- Drizzle olive oil over the vegetable mixture.
- Add minced garlic, salt, black pepper, and dried rosemary. Toss until vegetables are evenly coated.

4. Arrange in the Oven:
- Line a large baking sheet with parchment paper.
- Arrange the marinated turkey breast in the center of the sheet.
- Spread the vegetable mixture around the turkey in an even layer.

5. Roast in the Oven:
- Place the baking sheet in the oven and roast for about 1 hour, or until the turkey reaches an internal temperature of 165°F (74°C) and the vegetables are tender.

6. Rest and Serve:
- Remove the baking sheet from the oven.
- Let the turkey rest for 10 minutes before slicing.
- Serve the turkey slices with the roasted vegetables.
