Oven-Roasted Brussels Sprouts and Clams with Maple Bacon Crumble
Ingredients
- 1 pound Brussels sprouts, trimmed and halved
- 4 ounces bacon, finely chopped
- 2 tablespoons maple syrup
- 1/2 cup fresh blackberries
- 1 lemon, zested and juiced
- 1/2 cup bread crumbs
- 2 dozen fresh clams, scrubbed clean
- 2 stalks celery, finely diced
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions
1. Preheat the Oven:
Preheat your oven to 400°F (200°C).
2. Prepare Brussels Sprouts:
- In a large mixing bowl, toss Brussels sprouts with 1 tablespoon of olive oil, salt, and pepper.
- Spread them on a baking sheet in a single layer.
3. Cook Bacon:
- Place a medium skillet over medium heat. Add chopped bacon and cook until crispy, about PT5M (5 minutes).
- Remove bacon with a slotted spoon and drain on paper towels, reserving 1 tablespoon of bacon fat in the skillet.
4. Create Maple Bacon Crumble:
- In the same skillet with reserved bacon fat, add bread crumbs and toast until golden brown, about PT3M (3 minutes).
- Stir in crispy bacon, maple syrup, and lemon zest. Mix well and remove from heat. Set aside.
5. Roast Brussels Sprouts:
- Roast Brussels sprouts for PT15M (15 minutes), stirring halfway through.
- Add blackberries and continue roasting for an additional PT5M (5 minutes).
6. Prepare Clams:
- While Brussels sprouts are roasting, heat the remaining tablespoon of olive oil in a large ovenproof pot over medium heat.
- Add diced celery and cook until soft, about PT3M (3 minutes).
- Add clams and lemon juice. Cover the pot with a lid and transfer to the oven.
7. Bake Clams:
- Bake until clams have opened, about PT10M (10 minutes). Discard any clams that do not open.
8. Combine and Serve:
- Remove the pot from the oven, carefully add roasted Brussels sprouts and blackberries to the clams and gently mix.
- Spoon the mixture onto a serving platter and sprinkle with maple bacon crumble.
- Serve immediately.
