Oven-Roasted Butternut Squash Soup with Basil and Cream
Ingredients
- 1 medium-sized butternut squash, peeled and cubed
- 2 medium onions, diced
- 3 medium tomatoes, quartered
- 4 cloves garlic, peeled and smashed
- 1 cup vegetable broth
- 1/2 cup heavy cream
- 1 tablespoon lemon juice
- 1/4 cup fresh basil leaves, chopped (plus extra for garnish)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
1. Preheat the Oven: Set your oven to 400°F (approximately 200°C).
2. Prepare Vegetables: In a large mixing bowl, combine the cubed butternut squash, diced onions, quartered tomatoes, and smashed garlic cloves. Drizzle with 2 tablespoons of olive oil and season with salt and pepper. Toss to coat the vegetables evenly.
3. Roasting: Spread the seasoned vegetables in a single layer on a baking sheet. Roast in the preheated oven for about 35 to 40 minutes, or until the butternut squash is fork-tender and lightly caramelized. Stir halfway through the roasting time for even cooking.
4. Blend Soup Base: Allow the roasted vegetables to cool slightly. Transfer them to a blender along with the vegetable broth. Blend until smooth. Depending on the size of your blender, you may need to do this in batches.
5. Heat Soup Mixture: Pour the blended mixture into a large saucepan over medium heat. Stir in the heavy cream and 1 tablespoon of lemon juice. Heat gently, stirring frequently, until the soup is hot but not boiling (about 5 to 7 minutes).
6. Finish with Basil: Stir in the chopped basil leaves and adjust seasoning with additional salt and pepper if needed. Continue to heat for another 2 minutes to meld the flavors.
7. Serve: Ladle the hot soup into bowls, garnishing each with a few fresh basil leaves. Serve warm.
