Oven-Roasted Butternut Squash Thai Red Curry Delight
Ingredients
- 1 medium butternut squash, peeled and cubed
- 3 tablespoons Thai red curry paste
- 2 red chiles, sliced
- 4 cloves garlic, minced
- 2 shallots, thinly sliced
- 1 tablespoon fresh ginger, grated
- Zest of 2 Thai limes
- 1 stalk lemongrass, smashed
- 1 teaspoon fermented shrimp paste
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
1. Preheat the Oven:
- Preheat your oven to 400°F (200°C).
2. Prepare the Butternut Squash:
- In a large bowl, combine the cubed butternut squash, olive oil, salt, and pepper. Toss until the squash is evenly coated.
3. Create the Curry Mixture:
- In a separate bowl, mix together Thai red curry paste, minced garlic, sliced red chiles, sliced shallots, grated ginger, lime zest, smashed lemongrass, and fermented shrimp paste. Stir until well combined.
4. Coat the Squash:
- Add the curry mixture to the bowl with the butternut squash. Toss thoroughly to ensure each piece of squash is adequately covered with the curry mixture.
5. Roast in the Oven:
- Spread the squash in a single layer on a large baking sheet lined with parchment paper.
- Place in the oven and roast for about 25-30 minutes, or until the squash is tender and slightly caramelized. Stir once halfway through cooking for even roasting.
6. Finalize and Serve:
- Remove the baking sheet from the oven. Discard the lemongrass pieces.
- Taste and adjust seasoning if necessary.
- Transfer the roasted squash to a serving platter, garnish with extra lime zest if desired, and serve hot.
