Oven-Roasted Caesar Salad with Homemade Croutons and Dressing
Ingredients
For the Salad:
- 2 heads of romaine lettuce, chopped
- 1/2 cup Parmesan cheese, grated
- 1 cup croutons
- 1 tablespoon oil
- Salt and black pepper to taste
For the Dressing:
- 2 egg yolks
- 4 anchovy fillets, minced
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1/2 cup oil
- Salt and black pepper to taste
For the Croutons:
- 4 slices of bread, cut into cubes
- 2 tablespoons oil
- 1 teaspoon garlic powder
- 1 teaspoon dried herbs (such as thyme or oregano)
- Salt and black pepper to taste
Instructions
1. Prepare the Croutons:
- Preheat your oven to 375°F (190°C).
- In a bowl, toss the bread cubes with 2 tablespoons of oil, garlic powder, dried herbs, salt, and black pepper until the bread is evenly coated.
- Spread the bread cubes in a single layer on a baking sheet.
- Bake in the preheated oven for PT10M (10 minutes), or until golden brown and crispy. Set aside to cool.
2. Make the Dressing:
- In a medium bowl, whisk together the egg yolks, minced anchovies, lemon juice, and Dijon mustard.
- Slowly drizzle in 1/2 cup of oil while continuously whisking to emulsify the dressing.
- Season with salt and black pepper to taste.
3. Prepare the Salad:
- Increase the oven temperature to 400°F (204°C).
- In a large baking dish, toss chopped romaine lettuce with 1 tablespoon oil, and season with salt and black pepper.
- Roast in the oven for PT5M (5 minutes) until slightly wilted and charred on the edges.
4. Assemble the Salad:
- Remove the romaine from the oven and allow it to cool slightly.
- In a large salad bowl, combine the roasted romaine, croutons, and grated Parmesan cheese.
- Drizzle with the homemade Caesar dressing and toss gently until well coated.
5. Serve:
- Serve the salad immediately for the best flavor and texture.
- Optionally, garnish with additional grated Parmesan cheese and cracked black pepper.
