Ingredients
- 3 lbs boneless beef chuck roast
- 3 tablespoons Kinder’s Carne Asada Rub
- 2 large onions, sliced
- 2 cups beef stock

- 12 flour tortillas

Instructions
1. Preparation: Season the Beef
- Preheat your oven to 325°F (163°C).
- Remove the beef chuck roast from the fridge and let it sit at room temperature for about 15 minutes.
- Rub the entire surface of the roast with Kinder’s Carne Asada Rub, ensuring an even coat.
2. Cook the Onions
- In a large oven-safe pot, spread the sliced onions evenly at the bottom.
3. Sear the Beef
- Heat a large skillet over medium-high heat.
- Sear the seasoned beef roast on all sides until browned, about 3 minutes per side.
4. Prepare for Roasting
- Place the seared beef on top of the onions in the oven-safe pot.
- Pour the beef stock and orange juice around the roast.
- Cover the pot with a lid or aluminum foil.
5. Oven Roast
- Place the pot in the preheated oven.
- Roast for approximately 3 hours or until the meat is fork-tender and easily shreds with a fork.
6. Assemble the Tacos
- Remove the pot from the oven and allow the beef to rest for about 10 minutes.
- Shred the beef using two forks and mix it with the flavorful onion mixture.
- Warm the flour tortillas in a dry skillet over medium heat.
- Fill each tortilla with the shredded beef mixture.
- Top with guacamole, salsa, and a generous sprinkle of fresh cilantro.
