Oven-Roasted Carrots and Parsnips with Mint Infusion
Ingredients
- 4 medium carrots, peeled and cut into sticks
- 4 medium parsnips, peeled and cut into sticks
- 2 tablespoons olive oil
- 1 tablespoon avocado oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh mint leaves, roughly chopped
Instructions
1. Preheat the Oven: Set your oven to 400°F (200°C) to allow it adequate time to reach the desired temperature.
2. Prepare Vegetables: Peel and cut the carrots and parsnips into uniform sticks, approximately 3 inches long and 1/2 inch thick, to ensure even roasting.
3. Seasoning: In a large mixing bowl, combine the olive oil, avocado oil, salt, and black pepper. Whisk until blended.
4. Toss and Coat: Add the carrot and parsnip sticks into the bowl. Toss until all the pieces are well-coated with the oil mixture.
5. Arrange and Roast: Spread the coated vegetables evenly on a baking sheet lined with parchment paper. Avoid overcrowding the vegetables for optimal roasting.
6. Roast in the Oven: Place the baking sheet in the preheated oven and roast for 25-30 minutes, flipping halfway through. The vegetables should be tender and caramelized around the edges.
