Oven-Roasted Chicken and Vegetable Casserole with Feta and Jalapeños
Ingredients
- 4 chicken breasts
- 2 cups corn kernels
- 1 cup diced tomatoes
- 1 cup chopped onions
- 1 cup diced bell peppers
- 1 cup diced potatoes
- ½ cup crumbled feta cheese
- ½ cup chopped sun-dried tomatoes
- ½ cup sliced jalapeños
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 2 teaspoons minced garlic
- 1 cup mixed beans (black, kidney, or pinto)
- 1 cup cornmeal
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 handful fresh herbs (such as parsley and cilantro), chopped
- 1 cup shredded cheese (cheddar or mozzarella)
Instructions
1. Preheat the Oven: Preheat your oven to 400°F (approximately 205°C).
2. Prepare the Chicken: Pat the chicken breasts dry with a paper towel. Rub them with 1 tablespoon of olive oil, then season with half of the chili powder, cumin, salt, and pepper. Set aside.
3. Prepare the Vegetable Mixture: In a large mixing bowl, combine the corn kernels, diced tomatoes, onions, bell peppers, potatoes, beans, sun-dried tomatoes, and jalapeños. Add the remaining olive oil, chili powder, cumin, and minced garlic. Mix until the vegetables are well coated.
4. Layer the Casserole: In a large roasting pan or casserole dish, spread the vegetable mixture evenly. Lay the prepared chicken breasts on top of the vegetables.
5. Top with Cheese: Sprinkle the crumbled feta cheese over the chicken and vegetables. Follow with the shredded cheese.
6. Roast: Place the casserole in the preheated oven and roast for about 35-40 minutes, or until the chicken is cooked through and the vegetables are tender. The internal temperature of the chicken should reach 165°F (75°C).
7. Garnish: Remove the casserole from the oven and let it rest for 5 minutes. Garnish with fresh herbs before serving.
