Oven-Roasted Chicken and Vegetable Medley with Crispy Pastry Puff
Ingredients
For the Chicken and Vegetable Medley:
- 4 boneless, skinless chicken breasts
- 1 head cauliflower, cut into florets
- 2 cups broccoli florets
- 2 large potatoes, peeled and cubed
- 1 1/2 cups mixed nuts, roughly chopped
- 1 cup shredded cheese (cheddar or your choice)
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tsp garlic powder

For the Pastry Puff:

- 1 cup graham cracker crumbs
- 1/2 cup melted chocolate
- 1/2 cup shredded coconut
- 2 Kit Kat candy bars, chopped
Instructions
1. Prepare the Chicken and Vegetables:
- Preheat your oven to 400°F (200°C).
- Place chicken breasts in a large roasting pan and season with salt, pepper, garlic powder, and rosemary.
- Add cauliflower, broccoli, and potatoes around the chicken, drizzling olive oil over the top. Toss to coat the vegetables evenly.
- Sprinkle the mixed nuts over the chicken and vegetables for an extra crunch.
2. Oven Roast:
- Place the roasting pan in the preheated oven and roast for about PT30M (30 minutes) or until the chicken is cooked through and the vegetables are tender. An internal temperature of 165°F (75°C) indicates fully cooked chicken.
- Remove from oven, sprinkle shredded cheese over the top, and return to the oven for PT5M (5 minutes) until cheese is melted and bubbly.
3. Prepare the Pastry Puff:
- While the chicken and vegetables are roasting, roll out the pastry sheet onto a floured surface.
- Cut the pastry into strips and arrange them over a baking sheet. Brush with beaten egg to create a golden-brown finish.
- Bake the pastry in the oven simultaneously for PT15M (15 minutes) or until puffed and golden.
4. Prepare the Dessert:
- In a medium bowl, combine graham cracker crumbs and melted chocolate, stirring to mix evenly.
- Spread the mixture onto a parchment-lined baking sheet and sprinkle with shredded coconut and chopped Kit Kat bars.
- Refrigerate the dessert mixture for PT30M (30 minutes) or until solidified.
5. Serve:
- Plate the chicken and vegetable medley alongside the crispy pastry puff.
- Offer dessert pieces as a sweet finale.
