Oven-Roasted Chicken Salad Croissant with Grapes and Almonds
Ingredients
- 2 chicken breasts
- Salt and pepper to taste
- 1/2 cup mayonnaise
- 1/4 cup plain yogurt
- 1 tablespoon red wine vinegar

- 1 cup red grapes, halved

Instructions
1. Prepare the Chicken:
Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and pepper. Place them on a baking sheet lined with parchment paper.
2. Roast the Chicken:
Place the baking sheet in the oven and roast the chicken for approximately 25-30 minutes or until the internal temperature reaches 165°F (75°C). Remove from oven and let cool.
3. Toast the Almonds:
While the chicken is roasting, place the slivered almonds in a single layer on a separate baking sheet. Toast in the oven for 5-7 minutes until golden and fragrant. Keep an eye on them to prevent burning.
4. Prepare the Dressing:
In a large mixing bowl, combine the mayonnaise, yogurt, red wine vinegar, and lemon juice. Mix well to create a smooth dressing.
5. Mix the Salad:
Once the chicken has cooled, dice it into bite-sized pieces. Add the chicken, halved grapes, toasted almonds, diced apple, diced bell pepper, and sliced olives to the bowl with the dressing. Gently toss until all ingredients are well coated.
6. Assemble the Croissants:
Slice the butter croissants in half horizontally. Spoon a generous portion of the chicken salad mixture onto the bottom half of each croissant. Top with the other half of the croissant. Press gently to secure.
