Oven-Roasted Chicken Salad with Grapes and Almonds
Ingredients
- 1 1/2 pounds chicken breasts
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 stalks celery, chopped
- 1 sweet onion, diced
- 1 cup red grapes, halved
- 1/2 cup almonds, toasted and chopped
- 1/2 cup mayonnaise

Instructions
1. Preparation
- Preheat your oven to 375°F (190°C).
2. Season and Roast the Chicken
- Coat the chicken breasts with olive oil, salt, and pepper.
- Place the chicken on a baking sheet lined with parchment paper.
- Roast in the oven for about 25 minutes, or until the internal temperature reaches 165°F (74°C).
