Oven-Roasted Cilantro Lime Chicken
Ingredients
- 4 chicken breasts
- 1 cup cilantro-lime dressing
- 1 bunch fresh cilantro, chopped
- 4 lime wedges
Instructions
1. Preheat the Oven
Set the oven to 375°F (190°C). Allow it to preheat completely while you prepare the chicken.
2. Marinate the Chicken
Place the chicken breasts in a shallow dish. Pour 1 cup of cilantro-lime dressing over the chicken. Make sure each piece is well-coated. Cover the dish with plastic wrap and let it marinate for at least PT30M (30 minutes). For best results, marinate for up to 1 hour.
3. Prepare the Baking Dish
Once marinated, arrange the chicken breasts in a single layer in a baking dish. Pour any remaining marinade from the dish over the chicken.
4. Oven-Roast the Chicken
Place the baking dish in the preheated oven. Roast the chicken for approximately PT25M (25 minutes) or until the internal temperature reaches 165°F. To ensure even cooking, baste the chicken with the pan juices halfway through the cooking process.
5. Finish with Fresh Cilantro and Lime
Remove the chicken from the oven. Allow it to rest for PT5M (5 minutes) to lock in the juices. Garnish each chicken breast with freshly chopped cilantro.
6. Serve
Plate the chicken with lime wedges on the side for an extra burst of citrus freshness when serving.
