Oven-Roasted Cilantro Pesto Pinwheels
Ingredients
- 1 sheet puff pastry, thawed
- 1 cup fresh cilantro leaves, packed
- 1/4 cup grated Parmesan cheese
- 1/4 cup walnuts
- 2 cloves garlic
- 1/4 cup extra-virgin olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 egg
- 1 tablespoon water
Instructions
1. Preheat the Oven
Preheat your oven to 400°F (205°C).
2. Prepare Cilantro Pesto
In a food processor, add 1 cup fresh cilantro leaves, 1/4 cup grated Parmesan cheese, 1/4 cup walnuts, 2 cloves garlic, 1/4 cup extra-virgin olive oil, 1/4 teaspoon salt, and 1/4 teaspoon freshly ground black pepper. Blend until you achieve a smooth consistency. Set aside.
3. Prepare the Puff Pastry
Lightly flour a surface and roll out the thawed puff pastry sheet to approximately a 10x12 inch rectangle.
4. Spread the Pesto
Evenly spread the cilantro pesto over the rolled-out puff pastry, leaving a 0.5-inch border on one long side.
5. Roll and Slice the Pastry
Starting at the longer side without the border, tightly roll the puff pastry into a log shape. Seal the edge by brushing a little water.
Cut the rolled pastry into 1-inch slices, yielding about 12 pinwheels.
6. Prepare Egg Wash
In a small bowl, whisk together 1 egg with 1 tablespoon of water. Brush the tops of each pinwheel lightly with the egg wash to enhance browning.
7. Bake the Pinwheels
Place the pinwheels on a baking sheet lined with parchment paper, spaced about 2 inches apart. Bake in the preheated oven for 15 to 20 minutes or until golden brown and puffed.
8. Cool and Serve
Let the pinwheels cool on a wire rack for about 5 minutes before serving.
