Oven-Roasted Citrus Herb Infused Dinner
Ingredients
- 2 quarts water
- 1/2 cup Kosher salt
- 10 fresh sage leaves
- 4 sprigs fresh rosemary
- Peels from 1 lemon
- Peels from 1 orange
- 1 tablespoon black peppercorns
- 6 garlic cloves, smashed
- 1 cup fresh cranberries
- 1 cup fresh orange juice
- 2 tablespoons fennel seeds
- 1 tablespoon coriander seeds
- 1 tablespoon juniper berries
- 6 sprigs fresh thyme
- 1 large shallot, sliced
- 1 large onion, quartered
- 1/2 cup apple cider
- 1 teaspoon table salt
Instructions
1. Preheat and Prepare:
- Preheat your oven to 350°F (175°C).
- Ensure all your herbs, fruits, and vegetables are washed and dried.
2. Create Citrus Herb Brine:
- In a large saucepan, combine water and kosher salt. Heat over medium heat until the salt is fully dissolved.
- Add sage leaves, rosemary sprigs, lemon and orange peels, black peppercorns, smashed garlic cloves, cranberries, orange juice, fennel seeds, coriander seeds, and juniper berries to the saltwater.
- Bring the mixture to a gentle boil, then lower the heat and let it simmer for 10 minutes.
3. Infuse and Cool:
- Remove the saucepan from the heat and add thyme sprigs to the brine.
- Let the brine sit and cool completely to room temperature. This process allows the flavors to meld and infuse.
4. Prepare Roasting Pan:
- In a large roasting pan, place the sliced shallot and quartered onion evenly. These aromatics will serve as a flavorful base for your dinner.
- Add apple cider to the roasting pan for additional depth of flavor.
5. Marinate and Roast:
- Once the brine has cooled, submerge your choice of protein (e.g., chicken or turkey) into the brine for at least 3 hours or up to overnight in the refrigerator for maximum aroma absorption.
- After marinating, remove the protein, pat dry with paper towels, and sprinkle with table salt to season.
- Place the seasoned protein onto the aromatics in the roasting pan.
- Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature of the meat reaches 165°F (75°C).
6. Rest and Serve:
- Once done, remove the roasting pan from the oven and let the meat rest for 10 minutes before carving.
- Serve the roasted meat with a garnish of fresh herbs and slices of citrus for an enhanced presentation.
