Oven-Roasted Creamy Brussels Sprouts & Leeks Gratin
Ingredients
- 1 lb Brussels sprouts, trimmed and halved
- 2 large leeks, cleaned and sliced
- 3 tbsp olive oil
- 2 tbsp unsalted butter
- Salt, to taste
- Pepper, to taste
- 2 tsp fresh thyme leaves
- 3 cloves garlic, minced
- 2 tbsp all-purpose flour
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tbsp Dijon mustard
- 1 tsp lemon zest
- 1/2 cup crispy fried onions
Instructions
1. Preheat the Oven
Preheat your oven to 400°F (200°C).
2. Prepare Vegetables
In a large mixing bowl, combine the halved Brussels sprouts and sliced leeks. Drizzle with olive oil, and season with salt, pepper, and fresh thyme. Toss until the vegetables are well coated.
3. Roast Vegetables
Spread the Brussels sprouts and leeks evenly on a baking sheet. Roast in the oven for PT20M or 20 minutes, until they start to caramelize and become tender.
4. Prepare the Cream Sauce
While the vegetables roast, heat unsalted butter in a saucepan over medium heat. Add minced garlic and sauté until fragrant, about PT1M or 1 minute. Sprinkle flour over the garlic and whisk constantly for PT2M or 2 minutes to form a roux.
5. Add Liquid Ingredients
Gradually add chicken broth to the roux, whisking continuously to prevent lumps. Once smooth, pour in heavy cream. Allow the sauce to simmer for PT5M or 5 minutes, until slightly thickened.
6. Enhance Flavor
Stir in grated Parmesan cheese, Dijon mustard, and lemon zest into the sauce. Mix until the cheese has melted and the sauce is creamy. Season with additional salt and pepper to taste.
7. Combine and Finish in Oven
Transfer the roasted vegetables into a casserole dish. Pour the cream sauce over the vegetables, ensuring even coverage. Stir gently to combine. Sprinkle the top with crispy fried onions.
8. Gratin in Oven
Place the casserole dish in the oven and bake for another PT15M or 15 minutes, until the top is golden brown and bubbly.
9. Serve
