Oven-Roasted Curry Chicken Sliders with Savory Pumpkin Potato Mash and Sweet Corn Medley



Ingredients



For the Chicken Sliders:
- 1.5 lbs boneless, skinless chicken thighs
- 1 tablespoon curry powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon fancy butter, melted
- 8 King’s Hawaiian rolls

For the Pumpkin Potato Mash:
- 2 large potatoes, peeled and cubed
- 1 mini pumpkin, seeds removed and flesh cubed
- 2 tablespoons fancy butter
- Salt and pepper to taste

For the Sweet Corn Medley:
- 1 can (15 oz) creamed corn
- 1 package Jiffy cornbread mix
- 2 tablespoons fancy butter, melted

Dessert Garnish:
- 4 scoops ice cream of choice
- 1 green apple-flavored lollipop, crushed

Instructions



1. Prepare the Chicken:
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine chicken thighs with curry powder, salt, pepper, and melted fancy butter. Mix until the chicken is evenly coated.
- Place chicken on a baking sheet and roast in the oven for 25–30 minutes, or until the internal temperature reaches 165°F (74°C).

2. Prepare the Pumpkin Potato Mash:
- While chicken is roasting, bring a large pot of salted water to boil.
- Add cubed potatoes and pumpkin. Cook until tender, about 15–20 minutes (PT15M–PT20M).
- Drain and return to pot. Add fancy butter, salt, and pepper; mash until smooth and creamy.

3. Prepare the Sweet Corn Medley:
- In a mixing bowl, combine creamed corn and Jiffy cornbread mix.
- Spread the mixture in a greased baking dish. Dot with melted fancy butter.
- Bake alongside the chicken for 25 minutes, or until golden and set.

4. Assemble the Sliders:
- Once cooked, slice the King's Hawaiian rolls in half and layer each bottom half with a piece of roasted curry chicken. Top with the other half of the roll.

5. Prepare the Dessert Garnish:
- Scoop the ice cream into serving bowls. Sprinkle with crushed green apple-flavored lollipop as a garnish.

6. Serve:
- Serve chicken sliders alongside the pumpkin potato mash and sweet corn medley. Finish with the dessert garnish for a delightful end to the meal.
