Oven-Roasted Dalmatian Escape with Mediterranean Flavors
Ingredients
- 4 (6 oz) Fresh Sea Bass fillets
- 2 tablespoons Olive Oil
- 1 Lemon, thinly sliced
- 2 Garlic cloves, minced
- 1 teaspoon Dried Oregano
- 1 teaspoon Dried Thyme
- Salt and Black Pepper to taste
- 1 cup Cherry Tomatoes, halved
- 1 Red Bell Pepper, sliced into thin strips
- 1 Red Onion, thinly sliced
- 1 cup Kalamata Olives, pitted and halved
- 2 tablespoons Fresh Parsley, chopped
Instructions
1. Preheat the Oven
Preheat your oven to 400°F (200°C).
2. Prepare the Baking Dish
Lightly grease a large baking dish with 1 tablespoon of the olive oil.
3. Season the Sea Bass
Pat the sea bass fillets dry with paper towels. Rub both sides with minced garlic, the remaining olive oil, oregano, thyme, and a pinch of salt and pepper.
4. Arrange Ingredients in the Dish
Place the seasoned fillets in the baking dish. Arrange the lemon slices over the fillets. Distribute the cherry tomatoes, red bell peppers, red onion, and kalamata olives around the fish.
5. Roast in the Oven
Roast in the preheated oven for 20 minutes, or until the fish is opaque and flakes easily with a fork, and the vegetables are tender.
6. Garnish and Serve
Remove the dish from the oven and sprinkle with freshly chopped parsley. Serve immediately.
