Oven-Roasted Delicata Squash with Garlic Parmesan Crust
Ingredients
- 2 medium Delicata squash
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
Instructions
1. Preheat the Oven
Preheat your oven to 400°F (205°C) to allow it to thoroughly heat while you prepare the squash.
2. Prepare the Squash
Begin by washing the Delicata squash thoroughly under running water. Slice off both ends and cut the squash in half lengthwise. Scoop out the seeds with a spoon, taking care not to remove too much flesh. Once cleaned, cut the halves into 1/2-inch thick half-moons.

Place the baking sheet in the preheated oven and roast for approximately 25 minutes, flipping the squash pieces halfway through, until they are tender and golden brown with a crispy parmesan crust.
