Oven-Roasted Figs and Peaches with Prosciutto and Honey Drizzle
Ingredients
- 8 fresh figs, halved
- 2 ripe peaches, sliced
- 8 slices prosciutto
- 2 tablespoons olive oil
- 3 tablespoons honey
- 2 tablespoons balsamic vinegar
- 1/4 cup shelled pistachios, roughly chopped
- 1/2 teaspoon sea salt
- 2 tablespoons fresh parsley, chopped
- 1/2 cup Greek yogurt
- 1/2 cup labneh
Instructions
1. Preheat the Oven
Preheat your oven to 375°F (190°C).
2. Prepare the Baking Sheet
Line a large baking sheet with parchment paper for easy cleanup.
3. Arrange the Figs and Peaches
Place the fig halves and peach slices on the prepared baking sheet. Make sure they are evenly spaced and not overlapping to ensure even roasting.
4. Wrap with Prosciutto
Carefully wrap each fig half in a half-slice of prosciutto, securing them on the baking sheet with the open ends facing down.
5. Drizzle Olive Oil
Drizzle 2 tablespoons of olive oil over the figs, peaches, and prosciutto wraps, ensuring they are all lightly coated.
6. Roast in the Oven
Place the baking sheet in the oven and roast for 15 minutes. The prosciutto should become crispy, and the fruits should be tender and slightly caramelized.
7. Prepare the Honey Drizzle
While the fruits and prosciutto are roasting, combine the honey and balsamic vinegar in a small saucepan over low heat. Stir until well mixed and just warmed through, about 3-4 minutes.
8. Make the Yogurt Labneh Mix
In a small bowl, mix the Greek yogurt and labneh until smooth and combined. Set aside for serving.
9. Garnish with Pistachios and Parsley
Once the figs and peaches are roasted, remove them from the oven. Drizzle the honey-balsamic mixture over the top and sprinkle evenly with the chopped pistachios and sea salt. Add a touch of freshness with the chopped parsley.
10. Serve
Serve warm with a dollop of the yogurt-labneh mix alongside. This dish is best enjoyed immediately while the flavors are contrastingly fresh and roasted.
