For the Flank Steak:
- 1 ½ pounds flank steak
- 2 tablespoons olive oil
- Salt and pepper, to taste
For the Honey-Glazed Vegetables:
- 4 large carrots, peeled and sliced
- 1 small head cauliflower, cut into florets
- 2 tablespoons honey
- 1 tablespoon molasses
- 2 tablespoons olive oil
- Juice of 1 lemon
- Salt and pepper, to taste
For the Bacon Garnish:
- 4 slices bacon, cooked and crumbled
For the Chocolate Pudding Sundae:
- 2 ripe bananas, sliced
- 2 cups vanilla ice cream
- 1 cup chocolate pudding (store-bought or homemade)
- 1 cup mixed berries
Instructions
1. Preheat the Oven:
- Preheat your oven to 400°F (200°C).
2. Prepare the Flank Steak:
- Coat the flank steak with olive oil and season both sides generously with salt and pepper. Set aside to marinate slightly while you prepare the vegetables.
3. Prepare the Honey-Glazed Vegetables:
- In a large bowl, toss the sliced carrots and cauliflower florets with honey, molasses, olive oil, lemon juice, salt, and pepper until well-coated.
- Spread the vegetables evenly on a baking sheet lined with parchment paper.
4. Oven-Roast the Steak and Vegetables:
- Place the flank steak on a separate baking sheet. Insert both baking sheets into the oven.
- Roast the vegetables for 25 minutes, flipping halfway through, until they are tender and caramelized.
- Cook the flank steak for 12-15 minutes, flipping once halfway, until it reaches your desired doneness (approximately medium-rare at 130°F or 54°C internal temperature).
- Remove both the steak and vegetables from the oven. Let the steak rest for 5 minutes before slicing.
5. Prepare the Chocolate Pudding Sundae:
- While the steak is resting, prepare the sundaes. In serving bowls, layer chocolate pudding, vanilla ice cream, sliced bananas, and mixed berries.
6. Serve the Dinner:
- Slice the flank steak against the grain and serve it alongside the honey-glazed vegetables. Top with crumbled bacon for an added crunch.
7. Dessert Course:
- Serve the Chocolate Pudding Sundaes immediately after dinner for a delightful end to the meal.
