Oven-Roasted Fruit Medley with a Citrus Drizzle
Ingredients
- 2 ripe bananas, sliced
- 1 avocado, peeled, pitted, and sliced
- 1 mango, peeled and cubed
- 2 medium tomatoes, quartered and deseeded
- 2 peaches, pitted and sliced
- 2 plums, pitted and sliced
- 2 apricots, pitted and halved
- 2 nectarines, pitted and sliced
- 1 apple, cored and sliced
- 1/2 cup assorted citrus segments (orange, grapefruit, lemon)
- 2 persimmons, peeled and sliced
- 1 pear, cored and sliced
- 1 cup melon balls (cantaloupe or honeydew)
- 1 tablespoon olive oil
- 1 tablespoon honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- Pinch of salt
Instructions
1. Preheat the Oven:
- Preheat your oven to 375°F (190°C).
2. Prepare the Citrus Drizzle:
- In a small mixing bowl, whisk together the olive oil, honey, vanilla extract, ground cinnamon, and a pinch of salt until well combined.
3. Prepare the Fruit:
- Place the sliced bananas, avocado, mango cubes, quartered tomatoes, peach slices, plum slices, apricot halves, nectarine slices, apple slices, citrus segments, persimmon slices, pear slices, and melon balls into a large mixing bowl.
4. Coat the Fruit:
- Pour the prepared citrus drizzle over the fruit mixture. Gently toss to ensure all fruit pieces are evenly coated.
5. Oven-Roast the Fruit:
- Spread the fruit mixture evenly on a large baking sheet lined with parchment paper.
- Roast in the preheated oven for about 15-20 minutes (PT15M - PT20M). The fruits should be tender, and lightly caramelized without becoming mushy.
6. Cool and Serve:
