Oven-Roasted Garlic Chicken with Herbs
Ingredients
- 8 cloves garlic, peeled
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 lemon, sliced
- 1/4 cup chicken broth
Instructions
1. Preheat the Oven
Preheat your oven to 400°F (200°C).
2. Prepare the Garlic and Herbs
Place the peeled garlic cloves in a small bowl. Add olive oil, salt, black pepper, rosemary, and thyme. Mix until the garlic is well coated.
3. Prepare the Chicken
Lay the chicken breasts in a single layer in a baking dish. Pour the garlic and herb mixture over the chicken, ensuring even coverage.
4. Add the Lemon and Broth
Arrange lemon slices over and around the chicken. Pour the chicken broth into the baking dish.
5. Bake the Chicken
Place the baking dish in the preheated oven. Bake for 25-30 minutes or until the chicken is fully cooked and a meat thermometer reads 165°F (74°C).
6. Rest and Serve
Once cooked, remove the baking dish from the oven and let the chicken rest for 5 minutes.
Serve the chicken with garlic and lemon slices, drizzling some of the pan juices for added flavor.
