Oven-Roasted Ginger Chicken with Green Onion Infusion

Ingredients

- 2 rotisserie chicken breasts
- 2 tablespoons fresh ginger, minced
- 4 green onions, chopped
- 1 teaspoon salt
- 2 tablespoons neutral oil (such as canola or grapeseed)

Instructions

1. Preheat the Oven
Preheat your oven to 375°F (190°C).

2. Prepare the Ingredients
- Rinse and pat dry the rotisserie chicken breasts.
- In a small bowl, combine the minced ginger and chopped green onions. Add the salt and mix well.

3. Infuse the Chicken
- Gently lift the skin of each chicken breast, carefully sliding your fingers underneath to create a pocket.
- Evenly spread the ginger and green onion mixture under the skin of both chicken breasts.

4. Coat with Oil
- Lightly brush the outer skin of the chicken breasts with the neutral oil to ensure a crispy texture after roasting.

5. Roast the Chicken
- Place the infused chicken breasts on a foil-lined baking sheet.
- Roast in the preheated oven for 30 minutes, or until the skin is golden brown and the internal temperature reaches 165°F (74°C).

6. Rest and Serve
- Once fully cooked, remove the chicken breasts from the oven and let them rest for 5 minutes.
- Slice the chicken and serve warm with your choice of sides.
