Oven-Roasted Ham with Citrus Mango Glaze

Instructions
1. Preheat the Oven:
Set your oven to 325°F (163°C) to prepare for roasting the ham.
2. Prepare the Ham:
- Place the ham, fat side up, on a rack in a shallow roasting pan.
- Score the surface of the ham by making shallow cuts in a diamond pattern.
3. Make the Glaze:
- In a medium-sized saucepan, combine orange marmalade, Dijon mustard, port wine, brown sugar, pineapple juice, and mango chutney.
- Bring the mixture to a simmer over medium heat, stirring continuously until the sugar is dissolved and the ingredients are well combined.
- Remove from heat and set aside to cool slightly.
4. Apply the Glaze:
Using a basting brush, generously coat the surface of the ham with the glaze, saving some for later basting during roasting.
5. Roast the Ham:
- Place the ham in the oven and roast, basting with the remaining glaze every 30 minutes.
- Calculate 15 to 18 minutes of roasting per pound of ham, which amounts to approximately 1 hour and 45 minutes to 2 hours for a 7-pound ham.
- Insert a meat thermometer to ensure the internal temperature reaches 140°F (60°C) for safe consumption.
6. Rest and Serve:
- Once cooked, remove the ham from the oven and let it rest for about 15 minutes before carving.
- Serve slices of the ham with remaining glaze drizzled on top if desired.
