Oven-Roasted Herb and Cheese Medley with Lemon Vinaigrette
Ingredients
For the Vinaigrette:
- 1/4 cup olive oil
- 2 tablespoons wine vinegar
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 2 cloves garlic, minced
- 1 teaspoon Dijon mustard

- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes
- 1/2 cup grated Parmesan cheese
- 1/2 cup grated Romano cheese
Instructions
1. Preheat the Oven:
Preheat your oven to 400°F (200°C).
2. Prepare the Vinaigrette:
In a small mixing bowl, combine 1/4 cup olive oil, 2 tablespoons wine vinegar, 2 tablespoons lemon juice, 1 tablespoon lemon zest, 2 minced garlic cloves, 1 teaspoon Dijon mustard, 1 teaspoon chopped capers, 1 tablespoon maple syrup, 1 tablespoon honey, 1/2 teaspoon sea salt, and 1/4 teaspoon black pepper. Whisk together until well emulsified. Set aside.
3. Season the Cheeses:
In a large bowl, mix together 1 tablespoon olive oil, 1 teaspoon oregano, 1 teaspoon basil, 1 teaspoon parsley, 1/2 teaspoon thyme, 1/2 teaspoon sea salt, 1/4 teaspoon black pepper, and 1/4 teaspoon crushed red pepper flakes. Add 1/2 cup grated Parmesan cheese and 1/2 cup grated Romano cheese. Toss until the cheese is thoroughly coated with the herb mixture.
4. Oven Roast:
Spread the herb-coated cheese mixture evenly over a parchment-lined baking sheet. Place in the preheated oven and roast for approximately 12 minutes, or until the cheese is golden and crispy.
5. Assembly:
Remove the roasted cheese from the oven and let it cool slightly. Once cooled, break it into bite-sized pieces.
6. Serve:
Drizzle the prepared lemon vinaigrette evenly over the oven-roasted herb and cheese medley. Serve warm, as a luxurious lunch salad or appetizing starter.
