Oven-Roasted Herb-Crusted Chicken



Ingredients



- 1 whole chicken (about 4 to 5 pounds)
- 3 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- 4 garlic cloves, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 lemon, quartered
- 1 onion, quartered
- 4 carrots, cut into 2-inch pieces
- 2 tablespoons butter, melted

Instructions



1. Preheat the Oven
Preheat your oven to 375°F (190°C). This ensures an even cooking temperature for the chicken.

2. Prepare the Chicken
Pat the chicken dry with paper towels. Inside and out, ensure it's dry to help the skin crisp up.

3. Make the Herb Mixture
In a small bowl, combine the olive oil, chopped rosemary, thyme, parsley, minced garlic, salt, and pepper. Mix well to form a paste.

4. Season the Chicken
Rub the herb mixture all over the chicken, ensuring you reach under the skin where possible for enhanced flavor.

5. Stuff the Chicken
Stuff the cavity of the chicken with the quartered lemon and onion. This will add moisture and enhance the flavor.

6. Arrange the Vegetables
In a roasting pan, arrange the carrot pieces and pour the melted butter over them. Place the prepared chicken on a rack above the vegetables or directly on top if a rack isn't available.
