Oven-Roasted Herb-Crusted Pork Tenderloin
Ingredients
- 2 lbs pork tenderloin
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 2 tsp dried rosemary
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1 lemon, zested
- 2 tbsp Dijon mustard
- 1/4 cup breadcrumbs
- Fresh parsley for garnish
Instructions
1. Preheat the Oven
Preheat your oven to 400°F (200°C).
2. Prepare the Herb Mixture
In a small bowl, combine minced garlic, dried rosemary, thyme, oregano, salt, and black pepper. Stir in the lemon zest.
3. Coat the Pork Tenderloin
Pat the pork tenderloin dry with paper towels. Rub it with olive oil, ensuring all sides are coated. Then, spread the mustard evenly over the pork.
4. Add the Herb Crust
Sprinkle the herb mixture over the mustard-coated pork, pressing it into the meat gently. Follow by coating with breadcrumbs, pressing them to adhere well.
5. Roast the Pork
Place the pork tenderloin on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until the meat reaches an internal temperature of 145°F (63°C).
6. Rest the Tenderloin
Remove from the oven and let the pork rest on the baking sheet for 5-10 minutes before slicing. This allows juices to redistribute, keeping the meat moist.
7. Garnish and Serve
Slice the pork tenderloin into 1-inch medallions. Garnish with freshly chopped parsley before serving.
