Oven-Roasted Herb-Crusted Salmon with Lemon Garlic Asparagus
Ingredients
Main Ingredients:
- 4 (6-ounce) salmon fillets
- 1 bunch fresh asparagus, trimmed
- 1 lemon, sliced into thin rounds
Dry Ingredients:
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoons dried thyme leaves
- 1 teaspoon dried rosemary leaves
- 1 tablespoon grated Parmesan cheese
Wet Ingredients:
- 3 tablespoons olive oil
- 2 cloves garlic, minced
Instructions
1. Preheat the Oven:
- Preheat your oven to 400°F (200°C).
2. Prepare the Herb Mixture:
- In a small bowl, combine salt, black pepper, thyme, rosemary, and Parmesan cheese.
3. Prepare the Salmon:
- Place the salmon fillets on a baking sheet lined with parchment paper.
- Drizzle 1 tablespoon of olive oil over the salmon fillets.
- Press the herb mixture onto the top of each salmon fillet evenly.
4. Prepare the Asparagus:
- Arrange the asparagus around the salmon on the baking sheet.
- Drizzle the remaining olive oil over the asparagus.
- Evenly distribute the minced garlic and lemon slices over the asparagus.
5. Roast in the Oven:
- Place the baking sheet in the preheated oven and roast for about 15-18 minutes or until the salmon flakes easily with a fork, and the asparagus is tender-crisp.
6. Serve:
- Remove from the oven and transfer the salmon and asparagus to serving plates.
- Optionally, squeeze additional lemon juice over the top for extra flavor before serving.
