Oven-Roasted Herb-Infused Tomato Confit
Ingredients
- 2 pounds tomatoes, ripe and firm
- 1/4 cup olive oil
- 1 teaspoon salt
- 1 teaspoon sugar
- 5 cloves garlic, peeled and crushed
- 1 medium onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
Instructions
1. Preheat the Oven: Preheat your oven to 275°F (135°C) and position a rack in the center for even cooking.
2. Prep the Tomatoes: Wash the tomatoes thoroughly and pat them dry with a paper towel. Cut the tomatoes in half and remove the seeds if desired for a less watery confit.
3. Prepare the Baking Dish: In a large baking dish, scatter the thinly sliced onions and crushed garlic evenly across the bottom. This will infuse their flavors into the tomatoes as they cook.
4. Season Tomatoes: Lay the halved tomatoes cut side up on top of the onions and garlic. Drizzle the olive oil evenly over the tomatoes and sprinkle with salt, sugar, oregano, and basil to enhance their natural sweetness and flavor profile.
5. Roast in the Oven: Place the baking dish in the preheated oven and roast for PT2H30M (2 hours and 30 minutes) until the tomatoes are shriveled at the edges but still soft and juicy inside.
6. Add Parsley: Once roasted, carefully remove the dish from the oven using oven mitts. Sprinkle the freshly chopped parsley over the warm tomatoes for a burst of fresh color and flavor.
7. Serve: Allow the confit to cool slightly before serving. It pairs perfectly with toasted bread, as a topping for grilled meats, or mixed into your favorite pasta dishes.
