Oven-Roasted Herb Lime Chicken
Ingredients
Main Components:
- 1 whole chicken (about 4 pounds)
- 1 tablespoon olive oil
- 4 limes, sliced
Dry Ingredients:
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 tablespoon dried thyme
- 1 tablespoon garlic powder
Wet Ingredients:
- 3 tablespoons lime juice
- 2 tablespoons honey
Optional Garnish:
- Fresh lime wedges
- Chopped fresh parsley
Instructions
1. Preparation:
- Preheat the oven to 375°F.
- Rinse the chicken thoroughly under cold water and pat it dry with paper towels.
2. Seasoning:
- In a small bowl, mix the salt, black pepper, smoked paprika, dried thyme, and garlic powder.
- Rub the chicken with olive oil, ensuring it's evenly coated.
- Generously sprinkle the spice mixture all over the chicken, including the cavity.
3. Roasting:
- Place the lime slices inside the cavity of the chicken and scatter any remaining slices around the chicken in the roasting pan.
- In a separate small bowl, mix the lime juice and honey. Drizzle half of this mixture over the chicken.
- Place the chicken in the preheated oven and roast for about 75 minutes (PT1H15M), basting occasionally with the remaining lime-honey mixture, until the internal temperature reaches 165°F and the juices run clear when the thigh is pierced.
4. Resting:
- Once cooked, remove the chicken from the oven and cover it loosely with aluminum foil. Let it rest for 10 minutes (PT10M) before carving.
5. Serving:
- Carve the chicken and serve it with fresh lime wedges and a sprinkle of chopped parsley for an added touch of color and flavor.
