Oven-Roasted Herbed Lemon Chicken with Garlic
Ingredients
- 1 whole chicken (about 4 to 5 pounds)
- 3 tablespoons olive oil
- 1 lemon, zested and quartered
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 onion, quartered
- 3/4 cup chicken broth
Instructions
1. Preheat Oven:
Preheat your oven to 375°F (190°C).
2. Prepare the Chicken:
Rinse the chicken inside and out under cold running water. Pat dry with paper towels. Place the chicken on a clean cutting board.
3. Season the Chicken:
In a small bowl, combine olive oil, lemon zest, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper. Rub this mixture all over the chicken, ensuring an even coating. Place lemon quarters inside the chicken cavity.
4. Set Up the Baking Dish:
In a roasting pan, scatter the onion quarters and pour in chicken broth. This will keep the chicken moist and add flavor.
5. Position the Chicken:
Place the seasoned chicken breast-side up on top of the onion quarters in the roasting pan. Tie the chicken legs together with kitchen twine for even cooking.
6. Roast the Chicken:
Place the roasting pan in the preheated oven. Roast the chicken for about 1 hour and 30 minutes, or until an instant-read thermometer inserted into the thickest part of the thigh reads 165°F (74°C).
7. Rest and Serve:
Remove the chicken from the oven and let it rest for at least 10 minutes before carving. This helps retain the juices. Serve with roasted onion quarters and remaining pan juices.
