Oven-Roasted Herbed Potatoes with Garlic and Chives
Ingredients
- 2 pounds potatoes, preferably Yukon Gold or Russets
- 1 cup milk
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 3 tablespoons unsalted butter
- 1/4 cup finely chopped fresh chives
Instructions
1. Preheat the Oven
Preheat your oven to 400°F (200°C).
2. Prepare the Potatoes
Scrub the potatoes thoroughly under running water, ensuring all dirt is removed. Pat them dry with a paper towel. Cut each potato into 1-inch cubes.
3. Roast the Potatoes
Spread the potato cubes evenly on a large baking sheet. Drizzle with olive oil and lightly sprinkle with a pinch of salt and pepper. Toss to coat the potatoes evenly. Place the baking sheet in the preheated oven and roast for 25 minutes, stirring midway through to ensure even browning.
4. Prepare the Garlic Infusion
While the potatoes are roasting, in a small saucepan over medium heat, combine the milk, minced garlic, remaining salt, and pepper. Stir occasionally and bring to a simmer. Lower the heat and allow the flavors to meld for 5 minutes. Be cautious not to let the milk boil over.
5. Combine Butter and Chives
In a small bowl, mix the softened butter with half of the chopped chives. Set aside for garnishing later.
6. Final Combination
Once the potatoes are golden and crispy on the outside, remove them from the oven. Carefully pour the garlic-infused milk over the hot potatoes, ensuring all pieces are coated. Stir gently to combine, and let sit for 5 minutes to allow the flavors to soak in.
7. Serve
Transfer the potatoes to a serving platter. Dot with the chive butter and sprinkle the remaining fresh chives on top for garnish.
