Oven-Roasted Honey Dijon Chicken Dinner
Ingredients
- 4 boneless, skinless chicken breasts
- 4 tablespoons whole grain Dijon mustard
- 2 tablespoons honey
- 4 tablespoons salted butter, melted
- 2 cups potatoes, cubed
- 2 cups yams, cubed
- 1 cup carrots, sliced
- 2 cups Brussels sprouts, halved
- 1 large onion, sliced
- Salt and black pepper to taste
Instructions
1. Preheat the Oven:
Preheat your oven to 400°F (200°C).
2. Prepare the Marinade:
In a bowl, mix together the whole grain Dijon mustard, honey, and melted butter until well combined.
3. Season the Chicken:
Season the chicken breasts with salt and pepper. Place them in a large bowl and pour half of the honey mustard mixture over the chicken, ensuring each piece is evenly coated. Reserve the remaining sauce for later use.
4. Prepare the Vegetables:
In a large roasting pan, combine the potatoes, yams, carrots, Brussels sprouts, and sliced onion. Drizzle with any remaining butter from the chicken marinade and season with salt and pepper. Toss to coat.
5. Assemble the Dish:
Place the marinated chicken breasts on top of the vegetables in the roasting pan.
6. Roast:
Place the roasting pan in the preheated oven. Roast for about 25 minutes.
7. Baste and Finish Cooking:
After 25 minutes, remove the pan from the oven and brush the chicken with the reserved honey mustard sauce. Return to the oven and roast for an additional 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender.
8. Rest and Serve:
Let the dish rest for about 5 minutes before serving. Slice the chicken if desired, and serve alongside the roasted vegetables.
