Oven-Roasted Lemon Custard Tart with Almond Crust
Ingredients
For the Almond Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup almond flour
- 1/2 cup unsalted butter, cold and cut into small cubes
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 large egg, lightly beaten
- 1 teaspoon almond extract
For the Lemon Filling:
- 1 cup granulated sugar
- 3 large eggs
- Zest of 2 lemons
- 1/2 cup fresh lemon juice (about 3-4 lemons)
- 1/2 cup heavy cream
- 1/4 teaspoon salt
Instructions
1. Prepare the Almond Crust:
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine all-purpose flour, almond flour, sugar, and salt.
- Add cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
- Stir in the beaten egg and almond extract until just combined and the dough begins to come together.
- Press the dough into the bottom and up the sides of a 9-inch tart pan with a removable bottom. Prick the bottom of the crust with a fork to prevent bubbling.
- Place the tart pan on a baking sheet and bake in the preheated oven for 15 minutes, until just lightly golden. Set aside to cool.
2. Prepare the Lemon Filling:
- In a medium bowl, whisk together the sugar and eggs until well blended and a pale yellow color.
- Add the lemon zest, lemon juice, heavy cream, and salt. Whisk until fully combined and smooth.
- Pour the lemon mixture into the pre-baked almond crust.
3. Oven Roasting and Assembly:
- Reduce the oven temperature to 325°F (160°C).
- Carefully place the baking sheet with the tart back into the oven.
- Roast in the oven for about 25 to 30 minutes, or until the filling is just set in the center and has a slight jiggle.
- Remove from the oven and allow to cool at room temperature. Then transfer to the refrigerator to chill for at least 2 hours before serving.
