Oven-Roasted Lemon Herb Chicken with Garlic Butter
Ingredients
- 1 whole chicken (approximately 4-5 pounds)
- 2 lemons, quartered
- 1/4 cup olive oil
- 4 tablespoons unsalted butter, melted
- 6 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 large carrots, peeled and cut into large chunks
- 1 pound baby potatoes, halved
Instructions
1. Preheat the Oven
Set your oven to 375°F (190°C).
2. Prepare the Chicken
Rinse the chicken under cold water and pat dry with paper towels. Place it in a large roasting pan.
3. Season the Chicken
In a small bowl, mix together the olive oil, melted butter, minced garlic, chopped rosemary, thyme, parsley, salt, and pepper. Rub this mixture all over the chicken, including underneath the skin where possible for more flavor infusion.
4. Stuff the Chicken
Stuff the cavity of the chicken with lemon quarters. The lemons will help provide flavor and moisture as the chicken roasts.
5. Prepare Vegetables
Arrange the carrot chunks and baby potatoes around the chicken in the roasting pan. Drizzle a bit of olive oil over the vegetables and season with salt and pepper.
6. Roast in the Oven
Place the roasting pan in the oven and roast for about 1 hour 30 minutes to 1 hour 45 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) at the thickest part of the thigh (avoid touching the bone when measuring temperature).
7. Rest the Chicken
Once done, remove the chicken from the oven and let it rest for 10 minutes before carving. This allows the juices to redistribute throughout the meat, resulting in a juicier chicken.
8. Serve
Carve the chicken and serve it alongside the roasted vegetables. Optionally, garnish with additional fresh parsley.
