Ingredients

Instructions
1. Prepare the Chicken:
- In a large bowl, combine lemon juice, olive oil, minced garlic, soy sauce, honey, oregano, rosemary, salt, and pepper. Whisk together until well combined.
- Add chicken thighs to the bowl, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 4 hours for enhanced flavor.
2. Prepare the Vegetables:
- Preheat oven to 400°F (200°C).
- Arrange baby potatoes, onion, bell peppers, and tomatoes in a large roasting pan. Drizzle with a little olive oil and season with salt and pepper.
3. Combine and Roast:
- Remove the chicken from the marinade, reserving the marinade for later. Place the chicken thighs skin side up over the vegetables.
- Pour the marinade over the chicken and vegetables to infuse flavors during roasting.

4. Final Touches:
