Oven-Roasted Lemon Paprika Chicken



Ingredients



- 4 chicken thighs, skin-on and bone-in
- 4 cloves garlic, minced
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 lemon, juice and zest

Instructions



1. Preparation:
Preheat your oven to 400°F (200°C).

2. Season the Chicken:
Pat the chicken thighs dry with paper towels. In a small bowl, mix together the garlic, olive oil, salt, black pepper, paprika, lemon juice, and lemon zest until well combined.

3. Coat the Chicken:
Place the chicken thighs in a large mixing bowl or a resealable plastic bag. Pour the marinade over the chicken, ensuring each piece is thoroughly coated. Let it marinate for at least 15 minutes at room temperature or up to 2 hours in the refrigerator.

4. Prepare for Roasting:
Arrange the marinated chicken thighs on a baking sheet lined with parchment paper, skin-side up. Ensure they are spaced apart for even cooking.

5. Roasting:
Place the baking sheet in the preheated oven. Roast the chicken for about 35-40 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden and crispy.

6. Rest the Chicken:
Remove the chicken from the oven and transfer it to a serving platter. Let it rest for about 5 minutes to allow the juices to redistribute.

7. Serve:
Garnish with additional lemon zest or a sprinkle of fresh herbs if desired. Serve hot.
