Oven-Roasted Lemon Paprika Chicken
Ingredients
- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon paprika
- 1 lemon, sliced into thin rounds
Instructions
1. Prepare the Marinade:
- In a mixing bowl, combine the olive oil, minced garlic, salt, black pepper, and paprika.
- Whisk the ingredients together until well blended, creating a thick marinade.
2. Marinate the Chicken:
- Place the chicken thighs in a large resealable plastic bag or shallow dish.
- Pour the marinade over the chicken, ensuring each piece is thoroughly coated.
- Seal the bag or cover the dish, then refrigerate for at least PT1H (1 hour) or up to PT8H (overnight) for deeper flavor infusion.
3. Prep for Roasting:
- Preheat the oven to 400°F (204°C).
- Arrange the lemon slices in a single layer in a large baking dish.
4. Roast the Chicken:
- Place the marinated chicken thighs on top of the lemon slices, skin side up.
- Pour any remaining marinade over the chicken in the dish.
- Roast in the preheated oven for PT45M (45 minutes), or until the chicken skin is golden brown and crispy, and a meat thermometer reads 165°F (74°C) at the thickest part of the thigh.
