Oven-Roasted Mediterranean Vegetable Medley
Ingredients
- 2 medium zucchinis, sliced
- 1 large red onion, cut into wedges
- 2 large red peppers, deseeded and sliced
- 3 medium tomatoes, quartered
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon ground cardamom
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
1. Preheat the Oven:
Preheat your oven to 400°F (200°C).
2. Prepare the Vegetables:
Wash the zucchinis, red onion, red peppers, and tomatoes thoroughly. Cut the zucchinis into slices, the red onion into wedges, the red peppers into strips, and quarter the tomatoes.
3. Season the Vegetables:
In a large mixing bowl, combine all the vegetables. Drizzle with olive oil and sprinkle with garlic powder, onion powder, cardamom, salt, and pepper. Toss the vegetables to ensure they are evenly coated with the oil and seasonings.
4. Arrange on Baking Sheet:
Line a large baking sheet with parchment paper. Spread the seasoned vegetables out in a single layer to ensure even roasting.
5. Roast the Vegetables:
Place the baking sheet in the preheated oven. Roast for approximately 25 minutes, or until the vegetables are tender and starting to caramelize, stirring halfway through the cooking time for even roasting.
6. Finishing Touches:
Once roasted, remove the tray from the oven. Allow the vegetables to cool slightly before serving. Adjust seasoning with additional salt and pepper if needed.
