Oven-Roasted Mediterranean Veggie Medley with Feta
Ingredients
- 2 medium cucumbers, peeled and sliced
- 2 large tomatoes, chopped
- 1 cup crumbled feta cheese (sheep's milk)
- 2 tablespoons fresh oregano, chopped
- 1/4 cup goat's milk
- 1 teaspoon kosher salt
- 1/4 cup water
Instructions
1. Preheat Oven
Preheat your oven to 375°F.
2. Prepare the Vegetables
Place the sliced cucumbers and chopped tomatoes in a large mixing bowl. Add kosher salt and toss to combine, allowing them to release some of their natural juices.
3. Mix the Liquid Ingredients
In a small bowl, combine goat's milk and water. Stir in the crumbled feta cheese until it forms a creamy mixture. Set aside.
4. Season the Vegetables
Add freshly chopped oregano to the cucumber and tomato mixture. Toss to ensure even distribution of the herbs.
5. Assemble in Baking Dish
Transfer the seasoned vegetables into a shallow baking dish. Pour the feta and milk mixture over the top, making sure it covers all the vegetables.
6. Oven Roast
Place the baking dish in the preheated oven and roast for 30 minutes, or until the vegetables are tender and the cheese is slightly browned.
7. Rest and Serve
Remove from the oven and let cool for 5 minutes before serving to allow the flavors to meld.
