Oven-Roasted Miso Glazed Japanese Eggplants
Ingredients
- 4 medium Japanese eggplants
- 2 tablespoons white miso paste
- 2 tablespoons vegetable oil
- Cooking spray
Instructions
1. Preheat the Oven:
Preheat your oven to 400°F (200°C).
2. Prepare the Eggplants:
Wash the Japanese eggplants thoroughly under running water. Pat them dry with a clean kitchen towel. Slice each eggplant in half lengthwise.
3. Apply the Cooking Spray:
Lightly spray a baking sheet with cooking spray to prevent the eggplants from sticking.
4. Mix the Miso Glaze:
In a small bowl, combine the white miso paste and vegetable oil. Stir until you achieve a smooth, well-blended paste.
5. Coat the Eggplants:
Using a pastry brush, evenly spread the miso mixture over the cut sides of each eggplant half. Ensure you get a good, even coating for all halves.
6. Arrange on Baking Sheet:
Place the coated eggplant halves cut side up on the prepared baking sheet.
7. Roast the Eggplants:
Insert the baking sheet into the preheated oven. Roast the eggplants for about 25 minutes. The eggplants should be tender to the fork and the glaze should be caramelized and slightly bubbling.
8. Rest and Serve:
Once cooked, remove the eggplants from the oven. Allow them to rest for about 5 minutes before serving. This dish pairs wonderfully with steamed rice or quinoa.
