Ingredients
- 4 bone-in, skin-on chicken thighs
- 2 tablespoons mustard powder

- 1 tablespoon fresh lemon juice

- 2 teaspoons dried thyme

Instructions
1. Preheat the Oven:
Preheat your oven to 400°F (200°C).
2. Prepare the Mustard Mix:
In a small bowl, combine the mustard powder, olive oil, honey, lemon juice, minced garlic, dried thyme, salt, and black pepper. Mix until you form a smooth paste.
3. Coat the Chicken:
Pat the chicken thighs dry with paper towels. Place them in a large mixing bowl or a baking dish. Pour the mustard mix over the chicken thighs, ensuring they are well coated on all sides. Massage the mixture into the chicken for even flavor distribution.
4. Arrange in Baking Dish:
Arrange the coated chicken thighs in a single layer in a baking dish, skin side up, allowing some space between each piece for even roasting.
5. Roast the Chicken:
Place the baking dish in the preheated oven. Roast for approximately 45 minutes to 1 hour (PT45M-PT1H) or until the internal temperature reaches 165°F (75°C) and the skin is golden and crispy.
6. Rest Before Serving:
Remove the chicken from the oven and let it rest for about 5 minutes before serving. This allows the juices to redistribute, ensuring moist chicken.
