Oven-Roasted Mustard Herb Chicken
Ingredients
- 4 bone-in, skin-on chicken thighs
- 3 tablespoons yellow mustard
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
1. Preheat the Oven:
Preheat your oven to 425°F (220°C). Position the oven rack in the middle.
2. Prepare the Mustard Herb Mixture:
In a small mixing bowl, combine the yellow mustard, olive oil, minced garlic, dried thyme, dried rosemary, salt, and black pepper. Stir well until the mixture becomes a smooth paste.
3. Season the Chicken:
Pat the chicken thighs dry with paper towels to remove excess moisture. Using your hands or a brush, evenly coat each chicken thigh with the mustard herb mixture, ensuring that the skin is well-covered for optimal flavor.
4. Arrange the Chicken:
Place the seasoned chicken thighs skin-side up on a baking sheet lined with foil for easy clean-up. Make sure to leave space between each piece for even cooking.
5. Roast the Chicken:
Transfer the baking sheet to the preheated oven. Roast the chicken for approximately 35-40 minutes, or until the internal temperature of the chicken reaches at least 165°F (74°C) and the skin is golden brown and crispy. Customize the cooking time based on the size of your chicken pieces.
6. Rest and Serve:
Once roasted, remove the chicken from the oven. Allow it to rest for about 5 minutes before serving. This rest period ensures the juices redistribute, keeping the chicken moist and flavorful.
