Oven-Roasted Mustard-Mayonnaise Bites
Ingredients
- 4 egg yolks
- 1 tablespoon white vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon salt
- 1 cup vegetable oil
- Optional: Fresh herbs for garnish
Instructions
1. Prepare the Mayonnaise Base
In a medium-sized mixing bowl, whisk together the egg yolks, white vinegar, Dijon mustard, lemon juice, and salt until well combined.
2. Emulsify the Sauce
Slowly drizzle the vegetable oil into the yolk mixture while continuously whisking to create an emulsified mayonnaise. This will take about 5 to 7 minutes. The mixture should become thick and creamy. Adjust seasoning to taste.
3. Preheat the Oven
Preheat your oven to 350°F (175°C) while preparing the next steps.
4. Prepare the Roasting Tray
Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
5. Form the Bites
Using a teaspoon, place dollops of the emulsified sauce onto the prepared baking sheet, forming small, round bites. Space them about 1 inch apart to allow for even cooking.
6. Oven Roast the Bites
Place the baking sheet in the preheated oven. Roast the bites for approximately 12 to 15 minutes or until they are set and slightly golden at the edges.
7. Cool and Serve
Remove from the oven and allow to cool for a few minutes on the baking sheet. Gently transfer the bites to a serving platter. Garnish with fresh herbs if desired.
