Oven-Roasted Nutmeg Chicken with Herb Butter



Ingredients


- 1 Whole Chicken (about 4 lbs)
- 4 Tbsp Unsalted Butter, softened
- 1 tsp Ground Nutmeg
- 1 tbsp Olive Oil
- 2 tsp Sea Salt
- 1 tsp Black Pepper
- 4 cloves Garlic, minced
- 2 tsp Fresh Thyme, chopped
- 1 Lemon, halved
- 1 Onion, quartered
- 3 Carrots, cut into large chunks
- 1 cup Chicken Broth

Instructions


1. Preheat Oven:
- Preheat your oven to 375°F (190°C).

2. Prepare the Chicken:
- Pat the chicken dry with paper towels. This ensures a crisp, golden skin.
- Rub the inside cavity with 1 teaspoon of salt and half of the black pepper.

3. Make the Herb Butter:
- In a small bowl, mix the softened butter, ground nutmeg, minced garlic, chopped thyme, and remaining salt and pepper until well combined.

4. Season the Chicken:
- Carefully loosen the skin over the breasts of the chicken using your fingers.
- Spread a portion of the herb butter under the skin of the chicken breasts. Rub the remaining butter all over the outside of the chicken.

5. Stuff the Chicken:
- Place the lemon halves and onion quarters inside the cavity of the chicken.

6. Prepare the Roasting Pan:
- Arrange the carrot chunks around the bottom of a roasting pan.
- Place the seasoned chicken on top of the carrots. Pour chicken broth into the pan to keep the carrots moist during roasting.

7. Roast the Chicken:
- Place the roasting pan in the preheated oven. Roast for approximately 1 hour and 30 minutes, or until a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C). Baste occasionally with pan juices.

8. Rest the Chicken:
- Remove the chicken from the oven and let it rest for 10 minutes before carving, allowing the juices to redistribute. Discard lemon and onion from the cavity.

9. Serve:
- Carve the chicken and serve with the roasted carrots and a drizzle of the flavorful pan juices.
