Oven-Roasted Pineapple Avocado Salsa with Jalapeños
Ingredients
- 1 ripe pineapple, peeled, cored, and diced into 1-inch pieces
- 2 ripe avocados, peeled, pitted, and diced
- 1 medium red onion, finely chopped
- 2 jalapeños, seeded and finely chopped
- 2 limes, juiced
- 1/4 cup fresh cilantro leaves, chopped
- 1 teaspoon sea salt
Instructions
1. Preheat the Oven: Preheat your oven to 375°F.
2. Prepare the Pineapple: Place the diced pineapple pieces on a baking sheet lined with parchment paper. Ensure they are spread out in a single layer for even roasting.
3. Roast the Pineapple: Place the baking sheet in the preheated oven and roast the pineapple for about 20 minutes or until the edges are slightly caramelized and golden brown. Stir the pineapple halfway through the cooking time for even roasting.
4. Cool the Pineapple: Remove the pineapple from the oven and let it cool on the baking sheet for about 10 minutes.
5. Mix the Salsa: In a large bowl, combine the roasted pineapple, diced avocados, red onion, jalapeños, freshly squeezed lime juice, chopped cilantro, and sea salt.
6. Toss the Ingredients: Gently toss all the ingredients together until they are well mixed. Take care not to mash the avocados.
7. Taste and Adjust: Taste the salsa and adjust the seasoning with additional lime juice or sea salt according to your preference.
8. Chill and Serve: Cover the bowl with plastic wrap and refrigerate the salsa for at least 30 minutes before serving. This allows the flavors to meld together beautifully.
