Oven-Roasted Salmon & Vibrant Glass Noodle Salad with Zesty Lime Chili Thai Dressing



Ingredients



For the Salad:
- 4 ounces glass noodles
- 2 cups baby spring mix
- 2 cups baby arugula
- 2 ripe avocados, sliced
- 1 large carrot, julienned
- 1 cup red cabbage, finely shredded
- 1/4 cup pickled broccoli stems, thinly sliced
- 1/4 cup fresh basil leaves
- 1/4 cup fresh mint leaves
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons black sesame seeds
- 2 tablespoons white sesame seeds

For the Dressing:
- 1/3 cup Lime Chili Thai Dressing

Roasted Marinated Salmon:
- 1 pound salmon fillets, marinated as desired

Instructions



1. Preheat the Oven:
- Preheat your oven to 400°F.

2. Prepare the Glass Noodles:
- In a large pot, bring water to a boil.
- Add 4 ounces of glass noodles and cook for 5 minutes or until tender.
- Drain and rinse under cold water to stop the cooking process.
- Set aside.

3. Roast the Salmon:
- Place the marinated salmon fillets on a lined baking sheet.
- Roast in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork.
- Remove from oven and set aside to cool slightly.

4. Assemble the Salad:
- In a large mixing bowl, combine the cooked glass noodles, baby spring mix, baby arugula, avocado slices, julienned carrots, shredded red cabbage, and pickled broccoli stems.
- Gently toss to mix the ingredients together.

5. Add Fresh Herbs:
- Add fresh basil, mint, and cilantro to the salad mix.
- Gently incorporate the herbs to enhance the flavors.

6. Dress the Salad:
- Drizzle 1/3 cup Lime Chili Thai Dressing over the salad, tossing gently to ensure an even coating.

7. Finish with Sesame Seeds:

8. Serve:
