Oven-Roasted Salmon with New Potatoes and Asparagus



Ingredients



- 1 pound new potatoes, quartered
- 4 salmon fillets (about 6 oz each)
- 1 bunch asparagus, trimmed
- 3 tablespoons olive oil
- 2 teaspoons fresh thyme leaves
- Salt, to taste
- Ground black pepper, to taste
- 1 lemon, sliced

Instructions



1. Preparation:
Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or aluminum foil.

2. Prepare New Potatoes:
In a medium mixing bowl, toss the quartered new potatoes with 1 tablespoon of olive oil, 1 teaspoon of fresh thyme leaves, salt, and pepper to your taste. Ensure the potatoes are evenly coated. Spread them in a single layer on one side of the prepared baking sheet.

3. Roast Potatoes:
Place the baking sheet in the oven and roast the potatoes for 20 minutes. PT20M.

4. Prepare Asparagus and Salmon:
While the potatoes are roasting, prepare the asparagus by tossing it with 1 tablespoon of olive oil, salt, and pepper in a bowl.
Season each salmon fillet with salt, pepper, and the remaining thyme. Drizzle the remaining olive oil over the fillets, ensuring they are well-coated.

5. Add Salmon and Asparagus:
After 20 minutes, remove the baking sheet from the oven carefully. Flip the potatoes for even cooking. On the other half of the baking sheet, arrange the asparagus and place the salmon fillets on top. Place lemon slices over each salmon fillet for added flavor.

6. Final Roasting:
Return the baking sheet to the oven and continue roasting for an additional 15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender. PT15M.

7. Serve:
Once cooked, remove the baking sheet from the oven. Let the dish rest for about 5 minutes before serving. Arrange the salmon, potatoes, and asparagus on plates and serve immediately.
